I have long believed that good food, good eating is all about risk. Whether we’re talking about unpasteurized Stilton, raw oysters or working for organized crime ‘associates,’ food, for me, has always been an adventure. —–Anthony Bourdain.

I took a risk trying this new butter cake recipe. Mum insisted I use her usual pound cake recipe for teatime at grandma's place yesterday. But, I like trying out new ones.

& thank god it turned out well!

It was dense and moist. Just the right texture.

Mum bought sugee cake too! It has this rich buttery taste and it's filled with raisins and nuts.

Have I ever told you I'm usually skinny on weekdays and fat on weekends, for very obvious reasons. ;D

Yogurt Blueberry Muffins

Feeling very weak already.

Ingredients

200g plain flour

80g sugar

2 tsp baking powder

1tsp salt

1 egg

185ml yogurt

90ml corn oil

150g fresh/frozen(thawed) blueberry

Method

In a large mixing bowl, stir in flour,sugar, baking powder and salt.

Then, make a well in a centre.

Combine egg, milk and oil. Add the egg mixture all at once to flour mixture.

Mix well. Fold blueberry into batter. The batter should be lumpy.

Grease muffin the tray. Fill 3/4 full.

Bake 190 degrees Celcious for 25 minutes. Serve warm.

This loaf actually doesn't have the bread texture. It taste something like cake. Something like fruit cake but this one only has apples and I added in dates!

Preparation time was only 15 minutes and the best part of this recipe is it doesn't use butter :)

Into the 8 x 3 inch baking tin.

Tadaa! Mmm the sweet cinnamon smell of the apple loaf.

Definitely making this again!

Grandma ople's apple pie

Boo! Last week I tried making something different- an apple pie with a lattice crust.

The lattice crust was very messy as I was rushing that morning. So I just cut, cut, roll, roll and put in on top ;) I learned that making the crust uses up A LOT of butter which means I won't be making this anymore.

Overall, it was just o-kay. Nothing extraordinary about this recipe. I prefer mum's apple crumble :) yumm!

Billy's Vanilla Cupcakes!

Thanks to Billy Reece for sharing his "Vanilla Vanilla Cupcake" recipe on Martha Stewart's show.

Here's the recipe:

Billy's Vanilla, Vanilla Cupcakes

Makes about 30 cupcakes
1 3/4 cups cake flour, not self-rising
1 1/4 cups unbleached all-purpose flour
2 cups sugar
1 tablespoon baking powder
3/4 teaspoon salt
1 cup (2 sticks) unsalted butter, cut into 1-inch cubes
4 large eggs
1 cup whole milk
1 teaspoon pure vanilla extract

1. Preheat oven to 325°. Line cupcake pans with paper liners; set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine flours, sugar, baking powder, and salt; mix on low speed until combined. Add butter, mixing until just coated with flour.

2. In a large glass measuring cup, whisk together eggs, milk, and vanilla. With mixer on medium speed, add wet ingredients in 3 parts, scraping down sides of bowl before each addition; beat until ingredients are incorporated but do not overbeat.

3. Divide batter evenly among liners, filling about two-thirds full. Bake, rotating pan halfway through, until a cake tester inserted in the center comes out clean, 17 to 20 minutes.

4. Transfer to a wire rack to cool completely. Repeat process with remaining batter. Once cupcakes have cooled, use a small offset spatula to frost tops of each cupcake. Decorate with sprinkles, if desired. Serve at room temperature.

Billy's Vanilla Buttercream

Colored sprinkles, for decorating (optional)
Makes enough for 30 cupcakes

1 cup (2 sticks) unsalted butter, room temperature
6 to 8 cups confectioners' sugar
1/2 cup milk
1 teaspoon pure vanilla extract

1. In the bowl of an electric mixer fitted with the paddle attachment, cream butter until smooth and creamy, 2 to 3 minutes. With mixer on low speed, add 6 cups sugar, milk, and vanilla; mix until light and fluffy. If necessary, gradually add remaining 2 cups sugar to reach desired consistency.

Enjoy!

Not the prettiest looking cupcakes but hey, they still taste great!

But I kinda altered the recipe. I added raspberry jam as the filing :)
